Minimizing waste can be challenging, particularly since items like cookies often come packaged in non-recyclable plastic. However, making everything from scratch can be time-consuming, and sometimes there's simply not enough time.
Here, we share our beloved and time-tested cookie recipe. It's a great activity to engage the kids or a speedy option when you're short on time but want a sweet indulgence.

These cookies are not only simple to prepare in both small and large quantities, but they also freeze well in their dough form and are highly versatile. We typically double the recipe so we can enjoy fresh homemade cookies in minutes whenever we like (if we didn't freeze them, we'd eat them all because they're that delicious).
Ingredients You Will Need
Here the list of ingredients for our vegan gooey cookie recipe:
112g vegan butter
100g granulated sugar
100g soft brown sugar
125g plain flour
56g cacao powder
1 tsp vanilla extract
1 tsp Baking powder
1/4 tsp salt
1 tsp soy milk (any non dairy milk will work)
175g dark chocolate chips (or buttons roughly chopped)

Step-by-Step Method
Method
Preheat the oven to 350F / 180C.
Add the butter and both sugars to a mixer and cream until light and fluffy.
Add vanilla and mix until combined.
Sift the flour, cacao and salt together and add to the wet mix.
Fold until combined (by hand with a spatular).
Add the milk and mix into a ball. It will be thick but not crumbly (add more milk if needed)
Roll into balls using your hands. We weigh them to 45g each ball, but measure with your heart. At this point you can freeze on a baking sheet, once frozen pop in a freezer bag or container.
Evenly spread out on a lined baking sheet and bake for 10 mins.
Let cool slightly (they will firm up), then enjoy warm they will have a slight crunch to the outside but gooey in the middle.
Tips to Customise Your Cookies
Add Nuts
Enhance nutrition by incorporating a handful of any nuts. Macadamia nuts are a good choice.
Make them allergy-friendly
Use gluten-free oat flour.
Change the chocolate
Replace all or some of the chocolate chips with white or milk chocolate.
Storage and Serving Suggestions
These cookies can be stored in the refrigerator for up to a week. For extended storage, freeze them while still in ball form and keep them in a sealed container or zip-top bag. When cooking from frozen, simply take them out of the freezer and cook directly, adding a few extra minutes to the cooking time.
Enjoy them with a freshly brewed cup of tea or a glass of oat milk.
